Saturday’s Supper

Todays Saturday Supper is stuffed chicken. I originally heard this recipe on The Today Show a couple of years back. Since then I have made my own changes, mostly to save time. We have this meal at least once and sometimes twice a month. It is one of Seth’s favorites. I usually serve it with broccoli and mashed potatoes.

Torie’s Stuffed Chicken

It usually takes about 10 minutes prep time and about 30-60 min cook time depending on how thick your chicken is. This also serves 2 adults but you can make adjustments for more people.

2 boneless skinless chicken breasts

1 packet of dry garlic and herb dressing (I use this)

3/4 cup sour cream (you can substitute with plain non-fat yogurt)

2 tablespoons Olive Oil

1 cup Stove Top Stuffing Mix

1 lime

Pre heat oven to 350 degrees. Mix seasoning packet, sour cream, 2 tablespoons of olive oil, and 1/3 cup of stuffing mix in a bowl. Slice a pocket vertically on the chicken. Put half of the sour cream mixture inside the pocket of the chicken and place the other half on top. ( I don’t stuff the chicken anymore. I just put all of the mix on top of it). Sprinkle the remaining stuffing over the chicken and drizzle a little more olive oil over everything. Cut the lime in quarters. Squeeze half the lime over the chicken and place the other halves in the baking dish. Cook for about 30 minutes and then remove the foil for the remainder of cooking time.
