Chicken Stuffed With Broccoli and Cheese

Sorry to disappoint with an absent Inspired Fashion Thursday. My clothes are either packed away for our trip, being washed, or lost in the sea of clothes on the floor. But I do want to share this delicious recipe with you! It is easy, low-fat, little prep-time and so delicious.

What you will need:

  • Boneless-skinless chicken breast OR thin chicken breast cutlets.
  • Sliced cheese-the recipe called for swiss but I am not a fan so I used cheddar. 
  • 1 large egg
  • 2 tsp water
  • 3/4 cup whole wheat seasoned breadcrumbs-I actually used Panko bread crumbs
  • 2 cups broccoli floret, cooked, chopped small-Use more if you want to have it as a side dish
  • 2-3 tablespoons Pesto-I used a pre-made mix in a jar
  • Salt
  • Spray oil
  • Toothpicks

Preheat oven to 350°. In a small bowl, combine egg, water and a little salt. Beat with a fork to make an egg wash. Set aside and fill a second bowl with breadcrumbs.

Slice chicken breasts into thin cutlets or pound them to make them thinner. They will cook faster and roll up better if they are thin.
Rub about 1/2-1 tablespoons of pesto on the inside of the chicken breast. Sidenote: The recipe did not call for pesto, but I felt it would be too bland for my husband if I didn’t add a little something for taste. It actually turned out great!
Place a 1/2 slice cheese in the center of the chicken and top with a little broccoli. Take one corner of the chicken, pull up and wrap chicken to completely cover cheese. Use toothpicks to secure and season with a little salt.
Dip chicken into egg wash, completely coating, and then into breadcrumbs.
Spray baking sheet with oil and place chicken on baking sheet. Lightly spray chicken with oil and bake about 25 minutes, until fully cooked.
I served the chicken with broccoli and mashed potatoes. If you want to keep it on the healthy side serve with mashed sweet potatoes.
